Ingredients
- 4 cups mixed lettuce leaves (120 grams)
- 1 punnet cherry tomatoes, halved (250 grams)
- 1 Lebanese cucumber, thinly ribboned and rolled (200 grams)
- 4 slices smoked salmon, torn (100 grams)
- 1/2 red onion, finely sliced (50 grams)
- 1 & 1/2 tbsp light cream cheese (30 grams)
- 2 & 1/2 tbsp small capers (25 grams)
- 2 tbsp fresh dill, to garnish (10 grams)
- 1 tbsp extra virgin olive oil (20 mls)
Method
- On a large platter form a circle of mixed lettuce, gently decorate with cherry tomatoes, cucumber rolls, smoked salmon and red onion.
- Add ½ teaspoon dollops of cream cheese through the salad.
- Top with capers, dill sprigs and lightly drizzle salad with olive oil.
Note: This recipe is for four side portions, to serve this as a main course or to serve more people, simply increase the ingredients accordingly.
